So, if you didn't know there is a site in which you enter your Character's name and goes through your wow armory and finds all mounts that you haven't collected.
It then shows you a detailed planner in order to farm all of them with an optimized path. You can do this weekly in order to collect them all.

Next, Enter your realm and character name
The Overview page shows your complete character progress in terms of achievements, mounts, etc.
Go to the Collectable dropdown and click on Mounts.
This page shows all the mounts you have collected in the game.
To pull up an optimized planner, check the Show Planner box at the top of the page.
Now you will see a customized mount farming route you can follow to collect all the mounts you are missing from the game.
This site shows all the mounts including the BfA ones.
An alternate site which has a more detailed planner including the % drop chance, but covers only mounts up to WoD:
